In the heat of the day, in open market square of The Smokie Mountain slums, vendors sell and display raw chicken to customers.

Although there is no refrigeration, some vendors have a small circulating fan above their poultry to keep flies from staying too long.

The men all roared with laughter when I motioned to this man to “look up”at me as he chopped off a chicken’s head.

Perhaps, I should have let him concentrate and left him alone as he wielded the huge meat cleaver!
